Brioscai Meala (honey cookies)

Irish Honey Cookies Recipe, Brioscai Meala

A co-worker of TasteBudA let us borrow her cookbook as he prepared for a St. Patrick’s Day Breakfast feast. In an Irish Country Kitchen: A Cook’s Celebration of Ireland from 1993 has some great recipes in it. Looking for something to go with morning coffee, decided to make some Brioscai Meala (honey cookies).



The recipe is super simple and nearly foolproof.

Ingredients:
1 stick melted butter
6 Tbsp Honey
6 Tbsp Granulated White Sugar
1 tsp baking soda
1 egg yolk
3/4 cup sifted flour

Instructions:
Preheat oven at 350°.
Mix melted butter, honey, sugar, baking soda and egg yolk.
Slowly add flour to mixture.
Cover and refrigerate mixture for 10 minutes.
Roll balls approximately 1″ on floured surface
Bake on lightly greased cookie sheet or baking stone for 15-20 minutes, until golden browm
Cool completely and store in air tight container.
